Good eats and Quality time
Happy Monday!!!
I don’t know about you but I was kind of sad to see the weekend go… because we really had a GREAT one.
Some days (Ok, most days) daily schedules, routines and to-do lists really keep us occupied and on the go, far too often. With that being said, I would MUCH rather be busy busy than have nothing to do :) BUT it’s also important to take some down time. Time for just YOU and do something that YOU enjoy. Right?! OR something that you and your honey enjoy doing together. When was the last time that you had quality time with yourself/your special someone… away from distractions, work, kids, technology?
My handsome man and I really did have a good weekend with quality time together. Something we really needed after our busy summer.

I was really craving restaurant style nachos allllll week, so on Friday I finally broke down and made them. We made some of our favourite fresh salsa (although we added jalapeño and fresh bell pepper) to enjoy with Nachos, refried beans and cottage cheese. I thought the cottage cheese would be a bit healthier than sour cream. Good eats? Check!
Saturday morning I had a wicked 12.5km run. Normally, I REALLY dislike an out and back course but I wanted to run to my old stomping grounds, so I did run an out and back and it worked out alright! The last km before my turn around point was all uphill and I LOVED it!! I felt empowered and strong the whole time and wanted to do a happy dance when I made it to the top. Don’t worry, I refrained.. but I just love that adrenaline rush after a good run.
Later in the day, G-Man and I decided to venture off on our bikes. When we left, we had no idea where exactly we wanted to go nor how far.
We ended up spending 6 quality hours biking around the Region, exploring and taking full advantage of the beautiful sunny day. It was a bit crazy but so.much.FUN! I was definitely not prepared in the refuelling department and should have packed way more snacks.. especially since I’m known as “la Princesa de merienditas”. I only packed one granola bar each and 3 water bottles. Stupid on my part, I know.
We stopped to buy some local apples and peaches because we I needed a little break and something refreshing. I don’t know how G-Man puts up with me.. what a tolerant good husband. My legs were getting very tired and there were times when I felt like we would never make it home. 6 hours is a long time to be on a bike…
I think we spent the last hour of the ride talking about what we wanted to eat for dinner and decided that we were too tired to cook and that we were most definitely going to reward ourselves with food. Hey, we totally deserved it!! We went to our favourite little local Chinese restaurant. They have THE BEST hot and sour soup in town.
No, I did not shower.. I changed my shirt and tied my greasy hair back and was good to go. By the time we got home, I couldn’t (nor wanted) to do much more than this:
Sit on my bum and ice my knees because they were SORE. It was so worth it though because the quality time with my handsome man and the quality exercise we did together is priceless and let me tell you, it was quite the adventure!!
